About the inspiring book Lo Scalco alla Moderna, by Antonio Latini (Naples, 1692). We owe the use of tomato sauce for cooking to the Italian Antonio Latini (1642-1696), one of the first famous cooks in history and author of this collection of recipes from Italian gastronomy, published in Naples in two volumes in 1692 and 1694. Latini also wrote his autobiography, covering his adventures until becoming a \'scalco\' or butler at the service of the demanding Spanish elite in 17h century Naples. The first volume of Lo Scalco includes Latini’s most famous recipe: ‘Salsa di Pomadoro alla Spagnola’, the first tomato sauce in history. Having crossed the Atlantic aboard Spanish ships, the Aztec vegetable gained popularity in Europe during the 16th and 17th centuries. Regarded initially as a potentially dangerous food, tomato had a difficult journey from the popular tables to the aristocracy’s kitchens.
